Trying my first smoked meat loaf this evening. In the smoker as we speak. I used 2 lbs of hamburger, and 1 lb of jimmy dean sausage. Chopped onion, and half a green pepper. One egg, tablespoon of Jeffs rub and a little rub on top. I thought about going with the hot jimmy dean but just stuck with regular. Cooking with good ol kingsford blue bag and chunks of hickory and a little bit of Apple.. I don't smoke a lot during the week due to not being at home during the week because of my job but home for the week so wanted to try out the mods on my brinkinman. Still leaks a lot of smoke in unwanted places. Will have to use more silicone. And correct me if I'm totally wrong but I want to keep the smoke stack as closed as possible just enough to leak smoke out, and control the heat with the firebox damnper correct? Here's a few pics before going in.

I also added a little bit of this. If you haven't tried this seasoning I reccomend it. I love it on a lot of things. Even putting a little bit in with rubs you make. Has great flavor

That meat loaf sure looks GOOOOOOOOD ! I'm just like the majority of folks, once you have smoked meat loaf, you will never cook it in the oven again. It's one of the favorites for my family and friends.
