My new version of rumaki

Im going to try bacon wrapped scallops, mushroom and a chunk of jalapeno. And some canned chicken chunks with mushroom and jalapeno. Thinking smoking at 225 for 2 hours. I really have no clue for temp or time frame. Any ideas?
