So I am hopefully going to be successful today I am doing a 8lb pork but picnic cut that I rubbed with an African spice called berbera they use it on beef,fish and lamb because they don't eat pork but man it goes so well with pork when I BBQ. So I rubbed it in on Friday after noon also stared the fat to the meet and sank some Garlic cloves in. She has been in the fridge just calling my name. If anyone has ever try ed this let me know please and wish me luck.
