Short ribs, baby backs, rib tips on he PBC!

Cooked for 1000 veterans and their families yesterday with the local BBQ brethren guys and it got me in the mood to smoke something today. All those big rigs cooking chickens, briskets, ribs, and butts made me realize I wanted to spend today messing around. So I had thawed a rack of short ribs, a rack of baby backs and some some rib tips I trimmed off a rack of spares.

Kept the beef ribs simple with just kosher salt and coarse black pepper...

Coated the baby backs and rib tips with Jeff's rub...

Threw the beef ribs on around 11:30

Pork ribs on around 1:30

Beef ribs were looking nice after a couple of hours.

Thanks guys! Really great experience. They were so appreciative and excited to eat some good BBQ. They kept thanking us over and over again and I kept telling them this is the least we can do for them. I was grilling Italian sausage and burgers all day but I was really impressed with all quality brisket, ribs, pulled pork, and chicken the guys were putting out... Especially for such a large crowd. Definitely going to make this a yearly experience!

Thanks again everyone!

Here's the update. After 4 hours the beef ribs are lookin real nice but still feeling pretty rough so I wrapped them with a little beef broth and put them in the oven since the ribs were still hanging:

After about 3 hours or so I am going to foil the baby backs for the wife as she likes them real tender . The foiling ingredients:

A little darker than I wanted perhaps but im sure they will taste fine.

Beef ribs out of the foil:

Tenderness is great but I will pop them back in the smoker for a bit to crisp up he bark a bit

Baby backs lookin good out of be foil. Smelling and looking good. Already a little too tender for my liking but gotta keep the wife happy. Put them back on to set some sauce on them

Be back in a bit!

So eveything turned out awesome. I swear the pbc makes it so easy.

Overall I was very happy and very full. Pit barrel was running around 280 the whole time and the ribs took about 4 hours while the beef short ribs took about 6.5. Worth the wait though. Thanks for looking!
