Cooked for 1000 veterans and their families yesterday with the local BBQ brethren guys and it got me in the mood to smoke something today. All those big rigs cooking chickens, briskets, ribs, and butts made me realize I wanted to spend today messing around. So I had thawed a rack of short ribs, a rack of baby backs and some some rib tips I trimmed off a rack of spares.
Kept the beef ribs simple with just kosher salt and coarse black pepper...
Coated the baby backs and rib tips with Jeff's rub...
Threw the beef ribs on around 11:30
Pork ribs on around 1:30
Beef ribs were looking nice after a couple of hours.
