Happy Sunday!

I'm smoking some Pulled Pork today.  Trying to beat the Vegas heat - so I got up earlier than I wanted to.  Here's my Q-views so far. My full and happy smoker.  On my smoker; 2 - 8 lbs pork shoulders (center), some rib tips, and on the other side of the top pork shoulder there are two pork shoulder bones I had leftover from my smoke last week -  gonna smoke those bones for red beans I'm making next week.  Waiting patiently for my preseason football games to come on.  Enjoy your Sunday everyone.

Pork butts taken off the smoker when the IT hit 165  (it dropped a few degrees from the transport from my patio to my kitchen)...........I've had enough fun outside in the friggin' Vegas heat (107 today) ugh so I am taking my fun inside where it is cooler!


I sauced and foiled both of my girls (my pork butts) and I will finish cooking them in the oven until they hit an IT of 205.  Now it's time to shower and get ready for the 49'ers game.......

FINISHED PULLED PORK - finished cooking in a 325 degrees oven.  after my pork reached the IT of 205 I removed them and let it rest for 1 hour.  this is what it looked like....the moment of truth! it was fork tender as I knew it would be.


Awesome smoke ring I smoked my pork with pecan and maple wood.


My pulled pork ready to go.....feeding 12 Seniors and 13 young folks tomorrow and they all love my pulled pork

Wow! That's a great looking smoke you have going on there Josie! My mouth is already watering for those red beans that are a week out! I hope you post that one up! Love red beans!

Thanks DS....will definitely post up my red beans.  I am catering an executive sales luncheon next week. For some strange reason these executives requested red beans & rice along with some of my smoked St. Louis Ribs!  Go figure.... "The Roed to Good Cooking" is here to please!

Glad to hear that your catering clientele are enjoying everything your making!

Will you be making some fresh sausage to go into the red beans and rice? Mmmm sausage and shrimp and crawdads in there. A side of grits and collard or mustard greens, mmmmmmmmm!

you know I will lol....no shrimp, crawdads or grits..............collard greens for sure~
