Can I substitute the pork in the smitty recipe for something to make some all beef Texas hot links?

From the research I have done it looks like the traditional Texas sausage was all beef then pork started getting added in the '40s

Also how are collagen cases vs the pork ones?

Pork is typically added for its fat content. If you go all beef you will need to add some fat somehow.

I've had Kreuz's sausage and frankly, it's not that great. The sausage at Rudy's is better IMHO.
