It was my friend's birthday last weekend, and she requested I do some que. I've been interested in making some Tri-tip, so I took a shot at it. I lost my phone before I could post anything on here, but luckily everything backed up online.
I picked up 2 Tri-tips from Albertson's and plenty of sides.
The meat came out medium (I was shooting for medium rare) and was very tender and tasty. I used my rub on one and SPOG on the other. I was aiming for an IT of 110°F, but it went up much more quickly than anticipated. Pulled it off of the smoker at 130°F and seared it on the grill for about 2 minutes per side.
I made up some portobello mushrooms stuffed with Bleu cheese crumbles, spinach, prosciutto, diced mushroom stems, and topped with shredded parmesan, Romano, and Asiago cheeses.
I smoked them for about an hour. They were ridiculously good!
Did some potatoes with the cheeses, minus the Bleu, with salt, pepper,and a drizzle of olive oil. Smoked for about 2 hours.
Also, some fresh green beans drizzled with olive oil, salt, and pepper. Smoked for about half an hour,then finished then up with a quick high heat on the grill, all the whole wrapped in foil.
I also made some ABTs that were delicious, but those pics didn't back up unfortunately. The cook was a success, and I'll definitely be making all of this again!
