This past weekend we hosted a family reunion at our house Friday, Saturday, and Sunday.
Friday night was burgers and such. Typical picnic food.
For Sat. was pulled pork. I know we have had a ton of butt posts on here, but as my first on the RT, I had to share.
I had 4 Boston Butts totaling right around 30lbs.
Friday night I scored the fat cap, coated them with evoo and rubbed with Jd's Meat rub.
I put them in the smoker at 10pm at 220-225 fat cap up. I lit about a 1/3rd of an AMNTS for a little extra smoke to start. Then about 2hrs later put the probe in the larger one and went to bed.
The first look I took at these was at 10am the next morning to find.......
Everything coming along nicely! Our plan was to eat around 2pm, plenty of time.
The smaller one was done at 13hrs. (Pulled at 200 IT) Double foiled and towel in the cooler.
The second one was done at 14hrs. Foiled and in the cooler with its younger brother for a rest.
The last two at 16hrs.
The second one had let loose of its bone at 195IT so I pulled it then. (The bone wiggle really tells a tale on these.)
We had plenty of time so I smoked the whole time without foiling.
The first two had about 2hrs rest before pulling and eating, by then second two were done and resting for round 2 later in the evening.
