My first post, thanks for the welcome. I am a retired Aero Engineer from So California now living the dream in east Tennessee in a lake front sub-division for the past 8 years..

 

I was a KCBS judge and decided to take this year off. Lately I have been smoking fish, salmon, mahi and cod, gotta love smoked fish. This Friday I'm going to smoke chicken wings, charcoal and apple wood for the heat and smoke. I plan on brining with buttermilk and Franks pepper sauce for 24hrs.

 

Any better recipes please post.....Bonesteak
