New to charcoal smoking

Hi,

 

Glad to be onboard this forum. Lots of information on cooking meats and maintaining Smokers. I have an electric Masterbuilt that works very well but we want that intense smoke flavor that you get from a Smoker.  Bought a Brinkman Offset Smoker from Home Depot about a month ago. Used it for the first time two weeks ago and the babybacks turned out great with that smoke taste we were looking for. Looking forward to learning about what other meats that can be cooked. Thanks.

Welcome to SMF JWalker724.  Charcoal smoking with wood chunks is a great and convenient way to get that true BBQ taste.  Glad you've come over to the carbonized dark side.

How do you feel about the contrast of electric versus charcoal? I'm thinking about moving over to electric for convenience sake but not sure.

You could look at pellet too.. They have the same convenience as electric while burning wood for heat. Depending on the unit you might still add a smoke box of chips early in your cooks for the stronger smoke or perhaps a more complex smoke profile.

Cooking with an electric smoker make the ribs very tender but we don't get that smoke flavor that we get from our offset smoker. It's a lot more work and they take longer to cook but worth the wait.
