My name is Pat I've been using a smoker for about 10 years now.  I am getting ready to build a brick setup in my backyard and am trying to get ideas about how to set it up.

Previously I built a steel offset smoker and put it on a trailer without a real solid plan going in.  It ended up being too large, and wasted a lot of wood/coals because it was so inefficient. It also had trouble holding a consistent temperature from top to bottom.  I am trying to have more of a sound plan before committing to something for the yard.  Any and all advice would be appreciated!
