New Guy from Wichita Falls, Tx

Hello every one! I just wanted to say I've enjoyed looking over everyone's post in the past and I am now ready to join in the fun! 

I'm still pretty green when it comes to bbq and smoking meat but I have a high "want to" so I'm looking forward to getting started in my smoking career! Unfortunately I do not own my own smoker as of yet. So far I have only been able to cook out with my brother-in-laws and a time or two in town with a friend. The wife knows how much it means to me to get going so hopefully we can pull some funds together after our next vacation and make it happen sooner rather than later!


I had my 1st taste of the smoking fever just this past May. My brother-in-laws and their friends always compete out at a local Goat BBQ. They have done this every it has existed. The past 2 years I have been on the sidelines and only participated in the drinking activities. Turns out I'm pretty good at that. 2 years was long enough! I had to get in on the fun. Of course the new guy is responsible for cooking a goat their 1st year. After lots of research I was able to come up with something I though would be different from what I had seen everyone else turn in the previous years and it actually turned out pretty great!  We won 1st place Goat and I have been hooked ever since! 


I can't wait to to try some of the recipes/rubs/sauces/techniques everyone has shared and I look forward to learning and sharing as I go as well!

Welcome Rick,  getting into smoking can be however expensive or inexpensive as you want to make it. Part of the fun is there are so many options in both equipment and technique.

Welcome to SMF Rick!  Glad you're here and looking forward to adding pork, poultry, beef, lamb, fish, and whatever else you choose to your Q skills.  You've obviously got goat nailed! 


Have fun reading through all the threads deciding what type of smoker is best for you.  The choices may seam endless; electric, gas, wood, charcoal, combinations, homebuilt, commercial, offset horizontal, offset vertical, cabinet, yada yada yada.  You'll figure it out and that's half the fun.  Enjoy the process.

Howdy, Rick!

I'm a few counties South and East of you in Temple. I've only been smoking for maybe 3-4 years even though I'm about to start my 74th year.

You can start with very low costs if you look around a bit. For example, you can get yourself a tamale steamer at HEB and Weber Smokey Joe table top grill and make what is very much like the Weber WSM small smoker. Yes, most people use charcoal with wood chips and chunks but that's still smokin'. You can do this soup to nuts for less than a C-note. Do a little searching here and you will find lots of good threads on the Smokey Joe mini-WSM.

Also, use CraigsList. I picked up a Weber 22.5" One Touch Gold grill for $25. I've smoked a dozen or more pork shoulders (aka pork butts) on the Weber even though I have an MES that I started with.

Spend a little on these ideas and learn how to control fire and smoke a bit on inexpensive cuts. Also, spend on a good thermometer setup that will allow you to know the temp of the smoking chamber and the temp of your piece of meat. By the time you've got a good grip on the basics with relatively low start up costs, you will be much better prepared to decide what kind of smoking and what king of smokers you want.

Sounds like you've got a good support group already. I haven't tried cabrito yet.
