Well, I this is the 3rd spare rib cook, and by far the best yet. I am sticking now to one cook plan and modifying based on results, suggested tweaks and other info here. This time I reduced the crutch time to one hour (with agave and apple juice added to the crutch), and that did the trick. Perfect bend test, bite through tender without falling off the bone. Also have been adding agave to the sauce prior to finishing on the kettle grill. Needless to say these 2 slabs didnt stand a chance of becoming leftovers! Next up is butts round 2...I will show the butt no mercy...:biggrin:

GREAT LOOKING RIBS!  Congrats!  It's always great when you get your technique and flavors dialed in.  Sounds like you've got it!  Made my mouth water.
