Salami Time

Cure #1 smoked salami.

 

 

Mixed in fridge for couple days. Netted and stuffed tonight. Smoke tomorrow after i get back from Fantastic4.

Salami chubs are cooling now.

 

Lots of rain here in S,FL. I bought a 2 room shower tent for my MES when it rains.

 

 

 

Getting smoke.

AHHHHHHH

 

I could not wait. I had to cut the ends off anyways before i vac sealed em.

 

 

 

 

 

Ready for freezer then onto Paducah next month.
