And that's "Late Night Drunken Chickpea Salad!" (I'll spare you the story, but to say that the best things in life are discovered by accident, smiles, and I have made that dish ever since). Recipe follows:
1. Drain a can of chickpeas and mix it with some raw sliced red onion.
2. Mash in 1 whole COLD avocado, (so take a ripe one and put in the fridge overnight or put one in the freezer for ten minutes that same day if need be), but either way, the COLD avocado is the secret to this dish!
3. Then add about 2 tablespoons of amazing paprika, cut a lemon in half and squeeze the hell out of it into the dish too, and splash in/add some oil (I use avocado oil for all things but you can use olive oil) and grind some good sea salt in, and mix it up. There you go!
