Brisket today

My buddy in the rv park comes down and asks if I'll do a small brisket for him. I say yes so he shows up with a 17 pounder. Put it in at 0530 with a pan underneath to catch the drippings.

Not the best weather for smokin. So much for 15% chance of light rain.

Chin up...a little rain will help the brisket smoker stay low and slow.  It's all good.  Can't wait for more photos.

I had to let the awning in since the wind was blowing it against the camper!

Finally got the temp back up after the rain let up. 9 hours in.

Cut a slice to check it and it needs to rest a little longer. Lot of juice still coming out but it stays together until a slight tug.
