My name is Casey, and I've been lurking in the forums for a couple of weeks now, doing my due diligence before making my first big smoker purchase. Today I decided to register on the forum and dive into the action. I've already learned much from many of the posters on this site -- this is an amazing resource for a newbie like myself.
I live in Denver, CO, and I have relatively little smoking experience. I bought a simple Brinkmann vertical charcoal smoker from a big box a few years ago, but I've only used it sparingly and with little success. For a few months I've been trying to convince my wife that order and balance can be restored to the universe only if I buy a new smoker. It was a hard sell, but after a recent promotion at work (or because she couldn't bear to be asked to watch another "first smoke on the Smokin-It/Smokin Tex/Cookshack/MES" YouTube video), she caved.
After lots of research, I landed on the Smokin-It Model 3 with the 1800W Auber PID controller (WSD-1500GPH). I'm an engineer with an affinity for gadgets, and I like the idea of having programmatic control throughout a cook. I just need to be careful not to overcomplicate my way into bad food. The new equipment is en route and I hope to get it set up, seasoned, and then filled with meat in a couple of weeks (I have a previously-planned vacation next week, which I'd cancel if I could and smoke delicious food all week instead).
Like I said, I'm a novice, but I hope to be able to contribute something useful in the future, once I've got some experience under my belt. Until then, I promise to not be obnoxious, to search existing posts for an answer before creating a new thread, etc., and to appreciate learning from those who've been at this for a while.
