I'ts Hot Out--Made Meat Loaf

So it's hot out and humid as well, time to make meat loaf LOL.  Trying to use up stuff in my freezer so I took out some ground beef.  Had a box of Lipton beefy onion soup mix on hand, looked at the back of it, and away we go.  I have my own recipe and I'm not much into trying stuff out on a back of a box, but this turned out well.   Put the smoker on at 250 degrees and after I mixed everything up and formed the loaf I put the loaf on a smoker rack [sprayed with Pam].  Used some oak/maple chips for smoke.  I added the garlic and cheese.   Here is what I used:

1 envelope Lipton beefy onion soup

3/4 cup Italian bread crumbs

2 pounds ground beef

2 eggs

3/4 cup water

1/2 cup ketchup

1 T Garlic [diced]

4 oz parmesan cheese

bacon slices

Mix everything together  Form a loaf and put some bacon strips on top as shown [optional].  I set the smoker to 250 and added some oak/maple chips for the smoke.  Pulled the loaf at 165 degrees.  Reinhard


Everything is in the bowl.


Just enough bacon to cover the top.


In she goes!!


Put the loaf on a small rack and covered the loaf with foil to rest while I smash the potatoes.


Pretty simple but good.
 
that looks really good

I have yet to smoke a meat loaf it sounds awesome to me but my Wife-To-Be says no.... ill talk her into it eventually

Dang it that looks great - nice job, loved my last meatloaf I did also, can't beat it.

Points for the inspiration!! Just mixed up a loaf o' meat for tonight's dinner myself. Now I just gotta decide if I want to drag the smoker out and sit outside in the heat for a couple hours or stay in the AC and cook it in the oven.

Thanks everyone!!!  I've made meatloaf before in the smoker and they always turn out great.  Can't beat the love of the smoke vs in the oven, but there are times the oven comes in handy.  Sometimes I just want a good old comfort meal that I normally make in colder months.  Reinhard.
