On long smokes, such as brisket, or pork butt, I only go half the time with smoke.
I know people who simply don't like smoke taste. So I don't want too much.
I actually had a compliment from a guy who said he'd been to several hog roasts, and this was the
First time that the smoke flavor was not overpowering. Pretty good compliment
Anyway, I figured there might be some folks who may not want a lot of smoke, so I took it easy.
That's also why I never add sauce to pulled pork. Some folks don't want or need sauce, others might want a spicy sauce,
And some may want vinegar, or sweet sauce. I provided 5 homemade sauces, and they all got used some.
Different tastes for different people.
