Doing a small 3 lb brisket today.  This will be my first brisket.  I was wondering if there are any tips for cooking such a small brisket.  I am smoking on a Traeger and was curious what a good temp would be in addition to when to foil and expected time? Thanks for any advice. I'll be sure to post a picture of the finished product.  I've been browsing the site for a few weeks now and am excited to join the discussion.

Haven't been around much lately.   How did it go?    I'll be interested as I'm getting a 6 pound one delivered mid Aug from a local rancher, and I might have to cut it in half as my MES 30 racks are rather narrow.

How'd it turn out? At 3lb that was just a flat, yes? I'd probably go low to slow the cook time to give it time to break down the collegens. Maybe 190 or 200F until it hit the stall, then pan it with some au jus. Foil over, bump temp to 225F, and go to 203F IT before letting it rest an hour or so.
