Hey all,

I just got my Model #1 today and started the break-in period as described. Foiiled the top of the chip/wood holder, and the floor of the smoker. Set it at 250 (the max it will go and now I'm watching it. It started producing TBS at about 125 which surprised me and was at 160 in about 20 minutes and the magic 225 in 30 minutes. The temp kept rising and I let it so I could see what it would top out at. At around 310/315 there was an unburned gas explosion inside the unit that made me jump out of my chair (even though it was all contained inside the unit) and the temp flashed to 390.Ok.......that was exciting, then it began to drop again so I left it on the 250 setting. It fell all the way to 268 (mind, I'm using the Maverick ET  733 to check this) then started up again. I decided to see how far it would climb and it went to 316. Wow I thought. Am I going to have another gas combustion? So I decided that maybe I should back off the set temp to see if that would cause a drop, and it did. It's back down to 284 and dropping with a set temp of 225. That's the up to the minute account for now.This is my 1st time using an electric smoker, and I'm sure glad I'm not cooking anything. lol The temp is still going down and I do think I'll try another foodless burn using my AMZNPS tube instead of the 3 approx. 2 oz chunks of Hickory I used this time.

On the plus side this smoker is all stainless and really well made. There is just a slight wisp of smoke coming from the upper corner of the opening side of the door, and of course the smoke hole in the top. I'm now 1.5 hours into this burn and the temp is at 262 and going down. Still producing smoke.I'll post here again when I get stabilized.

Hmmmmm. Well, it went all the way down to 239 and then started climbing again, and right now it's up to 293 and still going up. This seems pretty weird for a supposedly set it and forget it smoker. I'm thinkin 3 chunks of wood was too much and the wood is wants causing the wild temp swings. I still have smoke coming out and I'm 2 hours in now; but I believe it may have stabilized at 293. Any help, thoughts or criticism would be appreciated.

Thanks for the reply. When in doubt, read the directions, ya? So I did, and there were 2 errors in my set up that caused all the wild temp fluctuations. They said to only use 2 chunks (that they provided) of hickory and I used 3, and they said that the top of the wood container needs to be fully closed, and I had tucked the aluminum foil around the top and folded it in such a way that it caused an air gap between the top and the side wall of the wood container. I'm running another test this morning with radically different results. No wood in the wood box. I put the AMZNPS tube in there instead, and just laid foil over the top of the wood box. With the AMZNPS in there and the smoker turned off it stabilized at 100. I turned the unit on and set it at 100 and the temp climbed to 140 and stabilized. Then I reset it to 185 to see if it would stabilize at 225. If it does it means all I have to do is subtract 40 degrees from whatever temp I want to cook at when I'm using the AMZNPS. 

I do have a question though. When I opened it up this morning to discard the ash the walls and inside of the door were pretty thickly covered in a brown residue from the smoke. It's kinda sticky too. Can somebody tell me what that is?

BTW, it seems to have stabilized at 220 so I think I'm good to go.

Hey all,

I went to the forum on the Smokin-it website and the wild temp fluctuations I was experiencing is totally normal with an empty smoker because the stainless steel is the only thing that's absorbing (and releasing) the heat. When there is meat cookin in the smoker it will stabilize. I'd still like to know what the substance is that's coating the inside of the smoker, but I may find that on the Smokin-it forum too. I'll let you know if I do.

Alright already. I didn't think you guys would be interested in an empty smoker, and I stand corrected. Pics will follow....after I've had a cup of coffee. She's a pretty sweet little smoker though. I hope the ol envy bug doesn't bite you to hard.

I took this one to show the only place that I have smoke coming out other than the smoke hole on top.


The Maverick ET 733 is ready to go. The grill clip wouldn't fit properly on the grill so I stuck the clip up into the smoke hole to hold it in place. It doesn't really block the smoke hole so I think that will work.
