Summer Sausage For A Trade

Met a guy last sunday who makes his own beer. Has a very nice setup. Got to talking about what i do and he said hey i will trade you a growler of beer for some SS....Sure.

Made up 5lbs of SS, Stuffed and smoked.

I like vac sealing the chubs when i get an IT of 150, then vac seal (no ice bath) and they come to IT at 152 in the vac bag. Works great

I put the netting on for looks this time again.

I didnt have time to stuff and smoke yesterday so i just mixed and put in fridge.

Almost ready to pull, this pick was 1.5 hours before pulling from smoker to vac seal.

Vac sealed and hanging to cool (no ice bath) Then in the fridge for a couple days. One chub i did not vac seal, wanna compare to one vac sealed.

Insulated and will keep the beer, cider, or whatever cold for a couple days if not in the fridge. Because of how it seals the beer doesn't go flat either. The company is local to me. They just came out with a 128oz one. I participated in their kickstarter campaign and will have my new 128oz in September and the carb tap too! When you live in the Mecca of Micro you get cools things!

but the minute i saw the drinktanks i was like i want one

my wife and i like this kinda keep drinks cold we have contigo ,fifty/fity and tanaki (don't remmem actual spellin )

but this one i like because of 1 gal

Cut one the chubs and made a meat and smoked cheese tray for the guys at the cigar shop tomorrow. Cut the rest of the soppressata also.
