Smoked giant turkey legs

Hi everyone!

Well I finally tried it.. Seeing as I'm in Florida I had to try and copy (or maybe even.. surpass?) the famous Disneyland smoked turkey leg. The first issue is finding these huge legs. I found a supplier that home delivers once every 2 weeks in South Florida but I didn't know the size of the legs. When they arrived they were perfect!

So the process was pretty standard (as I've read here and on line) but I made sure to bake them in the oven, individually wrapped in foil for 2 hours at 350 degrees AFTER 5 hours of smoking. This allowed for the meat to be fall off the bone. I was scared that all the moisture would be gone but there was more than enough fat left on the skin to self baste in the foil.

It came out amazing! Even better than Disneyland :)

Great flake, great crunch still moist


As you can see, the extra time in the oven allows for all the fat on the skin to disappear and create an amazing crispy skin

Thanks! I'm very happy it turned out. The more I work on this new technique (smoking that is) the more I see how much there is to learn even after being a professional chef for 20 years.. Nothing better than learning new things as the years go by :) 
 
 
Great legs! Great info, thanks. How did the legs get crispy if they were baked while wrap in foil?
I only wrapped them in foil when I put them in the oven. I smoked them first for 5 hours and then wrapped in foil and baked for 2 hours in the oven at 365 degrees. Then unwrapped and baked one hour at 340 degrees.

I'm going to have to try this. We love our WDW turkey legs! Thanks for sharing!
 
Turkey legs are one of my favorites meats

I eat them witht some potatoes salad and a cup of champagne
