Impromptu Chicken Smoke

Yesterday the Mrs. came home with 2 silicone muffin pans that she hesitantly allowed me to put some holes in the bottom for my first run at cupcake chicken. I also threw a couple of drumsticks in too.  So I threw together a rub that consisted of brown sugar, honey powder, paprika, garlic and onion powder, kosher salt, course black pepper, chili powder, cumin, celery salt, thyme and basil.  It was the first time making this rub and it was pretty amazing on the chicken.  I also threw together a modified version of my drunken bbq sauce which complimented the rub really well.  I smoked them at 275 with peach wood.  The drumsticks were smoked for 2 hrs, pulled and sauced and back in for another 15 mins for a total cook time of 2 hrs 15 mins.  The cupcake chicken was smoked for 1.5 hrs, pulled from the pan, rub applied back to the top, and back into the smoker for another 30 mins. before being pulled, sauced and put back in for another 15 mins for a total cook time of 2 hrs, 15 mins.

Out of the smoker, ready to eat!  All the chicken had bite through skin and tasted amazing!  There wasn't a piece left and I will be making this again!
