I have just recently built a UDS or ugly drum smoker. I have been giving it some season smokes to get a feel for controlling temp on it. It holds a steady 240 - 250 for a long time. I'm thinking about smoking a whole chicken for the first actual go. I need some tip though as I am not as experienced in smoking meat. Please help me out as I have found this forum to be most helpful with questions I has building the smoker!
