 Every one looks for something different  in there B/B ribs or should I say there priorities may differ. As I said before I look at added salt and other added chemicals. I am not real concerned with the fat content of the ribs. With the Smithfield ribs and Excel they only have 95 grams of salt per 4 oz where as the Swift Premium and Tender sweet ribs have about 450 grams per 4 ozs. Given that includes the bone weight that's lots of additives.

With that said there was a time in my life that my only concern was price. I was not overly concerned about my health.

I prefer regular spares to Baby Backs it's just my opinion that they have better flavor. This may be because they have more fat or that they have some belly meat on them. .

You not will see Beef products from Smith field except in there hot dogs or perhaps there sausage type  links. They are Hog producer and hog meat distributors.  Jted
I totally agree with you that priorities differ among people. As for fat, some people don't mind fat (my wife falls in this group) and some people don't like fat (I fall into this group) as I hate fat, it's taste and the feeling in my mouth when I get a piece of it in my mouth.

They were a huge hit with my family, the family i gave 2 racks to i haven't heard anything but im sure i will hear something.

Well my Kettle is 22.5 inch. But those pics are of my WSM (look closely and see the ribs on the second level) which is also 22.5 inch. I love my WSM although as stated in another thread I'm looking to upgrade in a month to as reverse flow offset stick burner.

I totally agree with you that priorities differ among people. As for fat, some people don't mind fat (my wife falls in this group) and some people don't like fat (I fall into this group) as I hate fat, it's taste and the feeling in my mouth when I get a piece of it in my mouth.
If you are talking non rendered fat i hate it. but rendered fat into the lean, now you are cooking!, I don't worry much about fatty ribs because i render a lot of that down in the cooking process, granted you don't get it all render( without totally over doing the ribs) but i think part of eating pork ribs is enjoying some fat. If that isn't your cup of tea maybe you should try some beef ribs? I can consistently get those less than $2/lb and smoke them similarly to the pork ribs and have real good eats and not very fatty. Just something you should think about when making ribs you like.

No beef ribs ... I like my baby backs that I get at Sams that have very little fat on them and what fat they do have cooks up in the smoking of them.

Now in talking about marbled fat in steaks or other meats, that is a different story and that is what makes them good and tender and again that cooks up when grilling or smoking, so they are edible without triming fat as you eat them. It is the heavy fat that I can't stand. Ditto for gobs of juicy fat in pork ribs that are heavy with fat thru out the ribs even after being smoked.

In the past I have posted good sale prices on pork at Food Lion.  Like the 1.29  Boston butts.

Baby Backs are on sale for 2 day only for 1.99 per lb. Friday and Saturday.

I checked a few zip code locations and basically if you have a Food lion near you check on the sale. It's on the first page of the circular. I checked south to Myrtle  beach, North Carolina, West Virginia, Virginia and Maryland. They all had the same sale. If you have one check it out. Jted
Schnucks has butt's on sale at $.89/lb. this week!  Limit 2 per person but worth the trips to the car and back to the meat dept.
