Did some baby back ribs and some wings and drum sticks this last weekend.  As usual during the final hour of the ribs I move the chicken off the racks onto the grates on the firebox to crisp up the skin some...however this weekend there might have been a little too much beer involved and the chicken might have been burnt..just slightly...not saying that is what happened, just saying it was possibility.  So tonight I decided to have some of the chicken, but instead of as is...I shredded it up (off the bones) and added a little BBQ sauce and put it on a toasted bun...OMG it was great, the smoke flavor really came out, almost tasted like a pull pork sandwich, but it was chicken.  I think this may be a new thing...I may burn some more chicken...I mean smoke some more chicken for pulled chicken sandwiches.  Anybody else try this....
 
Tried it not too long ago. Always thought it was a silly idea, since pulled pork is so easy and besides I like plain old smoked chicken. But then I had a bunch of leftover thighs and figured what the heck. And, like you, I really liked it! Who knew?
 
Yep pulled chicken is great! give it a whirl with white BBQ sauce. I even like to use smoked pulled chicken for chicken salad sandwees. Tasty stuff!

White BBQ sauce:

1/2 cup mayonnaise
1/4 cup vinegar
1/2 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 tablespoon sugar
1/2 teaspoon lemon juice
2 tablespoons apple cider

Try roadside chicken pulled on a sandwich, its good too!
