My name is Jim and I live in Central Florida. A friend of mine upgraded and gave me his old Large GrillDome. What I thought would be a fun little hobby has turned into an obsession! Every weekday is spent counting the days until Saturday when I can try something new.

I honestly don't know what the heck I am doing but everything I've done so far has tasted great. I've done a couple of pork shoulders that I used for pulled pork, a top round roast for Baltimore Pit Beef, a chuck roast for pulled beef and a few beer can chickens. I even cured and smoked my own bacon! Now I'm trying to learn more about smoking.

Next on my list, probably this weekend, will be a prime rib roast. I found this forum while looking for tips so I don't blow a $100 piece of meat. So if you have any tips and/or warnings, let me know. Otherwise I will peruse the forums and gain some knowledge from you guys!
