Greetings everyone. I have been cooking whole hog for about 12 years now using various "La China" boxes that I have bought and or built. Two years ago my wife bought me a vertical smoker from Home Depot that I have really enjoyed using. In fact I enjoyed it so much that I am embarking on a new project to build a smoker that can do the same thing as my la china boxes with whole hogs. I have found a lot of really useful info already here, but I know that I will need to be calling on your expertise as I progress with this build. Thanks in advance for the future advice.
