Son and grand kids are asking for me to make and ship some jerky and/or meat sticks to Japan.  I have never made any and I'm willing to experiment(on me).  I'm not afraid to try, but I really don't know where and how to make unrefrigerated meats...safely.

 

Can anyone help or is it not recommended for beginners?

First, check customs regulations about sending meat to Japan..... the check nepas threads... he sent lots of treats overseas...
