SlickJack, I grilled these chili dogs.  I grilled  them first on indirect heat [used charcoal].  Didn't want them to cook too fast and get the bacon done early.  Then about half way done I put them over direct heat, but on the upper rack of the grill.  This method gives the links even doneness through the whole process.  Internal temp should be around 160 deg.  Reinhard
 
Perry, for casings I use 32mm hog casings and for the stuffer I have a 5 pound vertical stuffer.  Reinhard
