Found a recipe that looked interesting from @forluvofsmoke in an old thread.

Using eye round. Got 6# on the smoker after over two days curing. Using hickory for the smoke in my MES 30.

Hope it turns out well!

GH that is a great idea using the smores sticks to hang it.Here is a nice easy rack that would work with them.

Looking good! The main problem I have with making jerky, is that it never lasts very long! drool.gif

Second load with beef sticks. Got a Nesco BJX-5 American Harvest Jumbo Jerky Works Kit on Amazon. It is really nice. Easy to use and clean.

The jerky turned out great....but it is really spicy! Whoa!! I love spicy stuff and I call this quite spicy. I used half of the cayenne pepper the recipe called for and it is in your face!
