Costco started carrying pork belly, so I had to try it. First made diagonal cuts into the fat to help with rendering and so the rub could get down in the grooves. Covered with olive oil and rubbed down with 1 part kosher salt, 1 part coarse ground pepper, little bit of garlic salt, onion powder, and paprika. I have my trusty water pan in the back corner, closest to the heat source. I Grill2 probe inserted, currently at 73 degress with a target of 203 degrees. Going low and slow at 240 degrees. I'll check back in in a couple hours for a little apple cider vinegar spritz.
 
I almost grabbed one the other day but opted not to for a brisket flat instead. I hope they keep carrying it and it's not a one and done
 
Looking good so far! I've only done one pork belly and it was a real fatty one so I tossed it on the gasser to cook out some of the fat at the end. I used the upper rack with indirect heatFWIW. Good luck!
