Sausage in the smoker

I purchased a rope sausage from a local butcher shop & wondering what IT to cook to? I don't want to make anything like pepperoni, just cook it with a smoky flavor. Should I smoke it for a while then finish on the grill?

I would cook it to an IT of 156. Grilling it after smoking adds a nice crusty goodness to them.

Thanks! It's a full smoker day & that was the only think I couldn't find any info on. Excited for our first foods out of our new toy! grilling_smilie.gif
