1st time poster and noob smoker.

I live in Az and got my 1st smoker ( a masterbuilt) for X-Mas

have had a blast so far (some success and some failures) but I never say die.

I see so many posts/receipts/guides and never know which ones to believe. found this forum and figured I'd see what others like me have to say

best so far was the pictured pork butt I did for 15 hours with applewood chips and a kicked up brine. the bone fell out as soon as I touched it. worst was 1st attempt at ribs, to much rub and not enough soak on the chips.

I hope to gain some insight and maybe pass on some wisdom (way down the road)


 
Welcome to the board, Jeff! Yep it can take a few tries but every failure is a lesson. Many here recommend running a log book so you can duplicate what works well.

What part of AZ are you in?

Most find it a bad thing to soak chips when using them in an MES.

I got a funny question for you:

Is it my imagination, or do you have your racks wrapped in foil??

It looks like that in the picture, when I look through the window in your door.

If it is----That's not a good thing to do---It blocks heat & air flow.

One more question:  Where is your control box???

That was a picture from day one, I had just unwrapped this huge box that had been staring at me for weeks leading up to Christmas morning.

I was so stoked I took the picture before removing the protective wrap on the grates and installing the controller.

this was Christmas Turkey, my 1st attempt at smoking and it came out perfect.
