The late Alan Scott built a couple of bread ovens here that were 9' x 7 ' internal .

You need centre support to spread the over all load. Otherwise it all stays the same, lower arch than mine & yours but thats because they are bread only & that  gives you ''oven spring'' & great crust.

I don't make pizza much so mine runs around 220c for roasting piglets, lambs that sort of thing.

I'm really enjoying our oven.   It holds heat very well.   After a night of pizza the next morning I'm still at 400-450F   My bread making skills really do suck, but it is a cheap hobby to learn.   I'm determined to make it work.  As for pizza,   everyone we have entertained can't believe just how good it is.

We're still having problems getting our dough to stretch, but good none the less.

In time I want to  expand to doing other things in the oven.

Dynamite, Wes!

Your skills are outstanding. You knocked this one out of the park.

Tell youf son that there is a fat old Tar Heel in Texas who appreciates his service and admires him for what he did.

Thank you sir!    I will pass the word.

Wes,

You had made a great introductory and a superior follow up to the end. You are the 1 of many Master Masons here but I appreciate all the time you take to help myself and others. This is what separates you from the rest of us, A TRUE LEADER!

I swear, if I make it east I am eating Pizza, ribs and butt with you and our Families!

OUTSTANDING LEADERSHIP WES.

Jim, I am overwhelmed by your kind words.

I'm not a master mason,  I'm just  a poor country boy who if wants something done, has to do it himself.

Wes,

I have just spent the last few days reading your 2 major builds. I plan to do a smoker and oven build as well soon. I really appreciate your efforts to inform everyone. I almost bought the same plans you are referring to but Rado did not reply to an inquiry so I assumed he was disconnected. Do you know if he is still around?

Thank again.

Wes, that is outstanding.

My father was a bricklayer for 50 years.  I became a brick layer but only worked at it for 10 years before going to college and becoming an electrical engineer.   Can't even remember how many fire places we built together many years ago but never a cool meat smoke like this project.  I may just need to steal your ideas, dust off the hammer, towel, level and get to work.  Thanks for bringing back some memories of past work and posting about such a great project.  I'm getting hungry already.
