Hey Folks,

I have been lurking about here for a couple of months trying to learn what I can and reading recommendations on smokers. I am from Burlington Ontario Canada. I currently own a Bradley puck smoker and have had some good success with this but have found it difficult at tims to maintain a low temp. Always wanted a proper offset smoker with a side mounted fire box and pulled the trigger this weekend and bought the Horizon Classic 16". Cured it last night and ready to smoke something this Wednesday (July 1st - Canada Day).

Couple of quick questions with my intro:

1) When smoking brisket, butts etc should I put a water tray in the bottom of the main chamber or is that a preferance thing? I see that some folks have done this and some have not so just wondering.

2) Looking for a cover for the Classic 16" and have called Horizon numerous times with no answer and no answering machine to leave a message. I know they make them because I have seen them on this site but they do not have them on their webiste for order. The retailer I purchased mine from in Ontario (Ontario Gas BBQ) didnt have any in stock and said it would be at least 4 months before they get more from Horizon. Do any of you know where I might eb able to order one from another retailer that would ship to Canada?

Anyway I'll take some pictures of my efforts this week and post them. Great site and lots of information!
