So I finally got around to harvest time before they over ripened and had to make my first official batch of home made jerk using nothing but scotch bonnets and no substituting habaneros. Got about 40 peppers and have another 50 or 60 that are still getting ripe. Used 6 whole peppers NOT seeded and de-membraned. I wanted this batch to make Jamaica proud! I was snacking on the peppers while I was prepping everything and man these are hands down my favorite pepper on the planet. Lips are still tingling an hour later. Loaded up the kettle with a whole cut up chicken, Stubbs natural briqs and a pouch of pimento. Smelling good and enjoying looking at my new concrete patio. Can't wait for my redneck pool to get set up on it in a week or so.

Haha Wimpy - irie indeed! Just mad that I was drinking some cheapo beer instead of red stripe!
Chicken was fantastic. Somewhere just shy of 2 hours in the 180 range. Skin was crisp and I'm fat and happy.
