321 Ribs and chicken for the first time

Hey guys well well this is my first time making 321 ribs,total cook time was 5 hours, I did two options one of them with mustard and rub  and the other one i did it with just oil and rub honestly we didn't like the one with mustard, so what i did is set up my smoker at 250-260  use the amzn smoker tube with apple wood  and cooked them for 3 hours straight spraying them with apple juice every 30 min after the 3 hours i foil them up with parkay brown sugar and honey and cooked them for 2 hours after that I unwrapped them and let them sit there for 30 min with BBQ sauce.

Everything went fine they had a good smoke flavor also meat was very tender the only thing that threw me off is that in one half of the rib the meat was red, It wasn't under cooked but just threw me off that it was red.

chicken was amazing as well just put rub on them and cooked them for 2 hours till they reached the temp.

do you guys recommend me throwing the ribs to a gas grill after the foil wrap or should i continue doing it like i did.

The only red (Pink) I see is inside the outer bark.

If that's what you're talking about, that would be the Smoke Ring.

It's considered a good thing, but it's just for show.

Nice job!!!! I'd eat a plate full and would not change a thing you are doing looks spot on.
