Crash and burn Spatchy!

It's hot! So hot that I could cook this bird in the smoker without turning it on! Well almost. Today I spatched a whole bird actually took out all the bones except the wing bones, thigh bones and legs. We're calling this crash and burn because I'm using this bashed up bird and tumbled marinating it in the meat tumbler! Using the Roadside marinade again.

Then it's doing to get thrown on the grate in the mini-wsm!

In the tumbler and waiting in the fridge. I'll tumbled it again right before it goes on the mini later. So stay tuned! More to come!

Nice Case... I like my tumbler, what ya think of yours so far ? Great lookin spatchy so far ! Today's high was just short of 100* ! How hot you all getting over there ?

At the flip. Still indirect internal temp is around 125-135.

I made this batch with apple cider vinegar because we were out of white. Smells very much like Bernstiens salad dressing which we have used as a marinade for years. Hmmm.
