I can't believe how good these turned out! A little over six hours with an hour rest. I used a slather of Louisiana hot sauce, coarse salt and pepper. Easiest cook yet. Put it on, took it off and wrapped for an hour. My family loved it. This was my first attempt at beef. A primer to my first brisket which I'll try next week. Thanks to all who post here to inspire us rookies!
