I new to this smoking thing. Just smoked my first chicken and pork. Came out good. I have the MB 30" propane, 2 doors. I've seen posts on what to get to make it better. Waiting for my digi therm. I used a 10" cast pan, with lava rock. I soaked my chips for over an hour. I filled my pan with water. Have not tested the included thermometer, but on lowest setting, was reading 250 to 300 degrees. I know I'm rambling on, so, how clean do you clean the racks? I've seen commercial smokers on TV and it appears that they never clean the smoker. So do I get it real clean, or let the dripping s collect. OH, I'm from Eastern Iowa.
