Picked up 20 lbs. leg quarters yesterday,for $8.26 thats 41 cents a lb. wow. Brined 10 Legs & Thighs over night,started the smoker setup at around 8:30 AM

KBB and Pecan Chunks




Did not take long to hit 230* put the Legs in 8:50 AM

The Temp dropped 20* I guess that was all the cold meat right above the Thermometer

Pulled the Legs at 10:30



Put the Thighs in at 10:50 AM



Pulled the Thighs at 12:30 PM



Wow The title today is my anniversary with SMF 1 yr ago today.

Thanks to everyone who has helped in any way,and the rest of you

for being a part of this forum.

Great price on the chicken should have picked up some extra to throw in the freezer for later smokes

DS Their was plenty to go in the freezer,cut the backs to use as crab bait.Will be smoking more for the 4th.Thanks for the kind words.

Awesome catch, you know you can Dry Ice pack that and send it to me right, there is such a thing called FED EX OVERNIGHT that just started and is amazing you should try it LOL

Nice looking smoke! Give those chicken parts an overnight nap in the Riadside brine, tasty stuff!

We use fish carcasses for crab bait here, cheaper than chicken! For crawdads though it's whole chickens tied to a few fathoms of rope. Pitch in the river and let me sit while you drink a beer. If it's hot enough you can five down and shake off the bugs into a goodie bag. If it's not pull in the chicken and shake into a bucket!
