Excited to get started. Received my first smoker. A charcoal vertical type. Can't wait to mod and hone some new skills. Need to be Texas proud. Been grilling for years on propane and charcoal. Found my passion with charcoal.

Well what do you know? I was so nervous and excited for my first smoke. It turned out pretty fantastic.

Congrats! I've just attempted my first smoke with baby back ribs and the flavor was amazing, but they were far too tough. Not sure where I went wrong, I smoked them for one hour, turned off the smoker burner and left them at 225 for another 2.5 hours? Not long enough maybe? Any suggestions would be beneficial.

Hmmm the temperature seems fine. I ran mine the same but for about 4 hours. My rig is a small vertical with a water tray. I cooked mine bone side down. I've made ribs before in the oven and always removed the membrane so I did that as well. I used a rub and let the ribs sit in the tray in the fridge for several hours prior to cooking.

Likely undercooked.... Ribs have a bunch of connective tissue & such that has to break down. You can do the bend test or use a toothpick in between the ribs for tenderness as well ! When the toothpick slides in with no resistance, they are done !
