Smoked Eggplant in Bison Burger Bolognese!

Happy Father's Day to all!

I smoked eggplant in some grape seed oil & a perforated grill pan on my little gas smoker with hickory chips for 25 minutes and it was fabulous and made for great texture to my bison Burger Bolognese over brown rice spaghetti with Pecorino sheep's Parmesan and black truffle sea salt and red pepper flakes and a simple Montelpuciano D'abruzzo wine!

That looks wonderful.  We started smoking a lot of our veggies for dishes, it adds yet another flavor profile.

Smoked tomatoes cut up and added to salsa or bruschetta, it adds such a great flavor.

We do herbs as well, ene of our favorites is smoked Garlic.  We smoke it for about 60 Minutes with pecan.  Portion it out, vacuum pack it, freeze it,  and pull it out to add to our favorite dishes during the year.
