I smoked eggplant in some grape seed oil & a perforated grill pan on my little gas smoker with hickory chips for 25 minutes and it was fabulous and made for great texture to my bison Burger Bolognese over brown rice spaghetti with Pecorino sheep's Parmesan and black truffle sea salt and red pepper flakes and a simple Montelpuciano D'abruzzo wine!
