Got a good deal on some.

Those look incredible!  Have a package of these in the freezer and just haven't thought to try them before.  Never done them before.  What temp do you smoke at and do you always pull at 150 IT?  These are much leaner than spares or babybacks so I am guessing they would dry out if cooked to higher IT?

These are loin csr's, if you look at the first picture you can see the rib bones.  You want to cook them like a loin.

 

If you have shoulder csr's they have a odd shaped bone in them.  Cook them to probe tender.
