Is it time to wrap yet?

Good morning all.

I started a 14 pound packer on my MES40 at 6:45 this morning. i am using the temp probe and the internal temp just reached 140 degrees at 10:45 am. i am smoking at 240 degrees.

I have heard multiple IT temps to pull and wrap but not sure. what temp do i pull it?

I started with mesquite using a Jack Daniels rub and an internal temp of 42 degrees. Then i switched to Apple and Maple chips.

It smells awesome but I just dont know what temp to pull and wrap?

any suggestions my esteemed mentors?

I was a little concerned due to the fact that it seemed like the IT rose quickly. 4 hours to 140 from 46. I will keep an eye on it and pull and wrap on your instructions. I will let you know how it turns out.
