Hello all, my name is Derek and I live in Jax, FL. I now have have my first smoker, my previous smoking has always been done on borrowed/rented smokers of various types. I've used vertical gas and charcoal, as well as offset, reverse flow types, I've only had experience with ribs and whole pigs.
The smoker I have is a Brinkman limited, I like the size, and it seems like an above average entry level unit. Now, I must tell you, this smoker was a Fathers Day gift from my loving family, and it is a wonderful gift. It has however, created an expensive domino effect, namely, where do I put it? Fortunately, I found a spot, the new smokers lounge and firepit area.
It will of course, require pavers, repainting that side of the house, decor, and a retractable awning, because that's where the FL sun lives. I will update with more pics this week, pavers are going in tomorrow, the awning is sitting in the garage. Now on to the smoker, I wanted a gas smoker for ease of use, but I wanted charcoal as well. What to do? Mod the smoker of course, so I've installed the gas burner, picking up tuning plates tomorrow, and changing the wheels out, cause I don't want new rusty pavers.
Not to mention my igrill temp probes in the mail.
So that's it for now, my $300 dollar smoker.
