Happy Sunday Fabulous Winos!

Taking a quickie break to whip up some healthful lunch before getting back to work on a speech I must deliver tomorrow; I took a humble FROZEN mackerel from this Bexx brand of goods that I do adore (not nearly as fresh as the mere bait that my local fishermen pals use mind you but still delicious nonetheless); and I smoked this and it was lovely!

High heat - 10 minutes with hickory on my humble gas machine - just mopped through grape seed oil after I gutted it, and then plated with avocado oil, lemon zest, freshly ground tri colored pepper and some sea salt (grey) that had lemon zest & fennel in it.

Fantastic - the skin being the best part - and as you can see, I was thorough! I am a good eater!

And too, it appears this summer that the once only RED drinking wine gal is now meandering my way through every Vinho Verde I can find.

Kind of a summer Portuguese "research project" if you will!

So far, so very delicious and agreeable!

The skin on this was so wonderful that it could have been 'cracklings' for a salad and without the fish even - despite the fish being terrific and soft too!

You are so lucky Capatin Randy! Hundreds of fresh mackerel right out of the sea!!! Amazing! I know it's mere bait to the striper fishermen but I love it! Especially the skin!!! Cheers and happy new week! - Leah
